Thick slices of tomato

Thin slices of salami

Sliced provolone cheese


Celery hearts

Ripe olives

Green olives

Chunks of tuna (optional)

Green onions – radishes


  1. Arrange lettuce on a large platter. Cover with salami and cheese slices. Cross with celery strips and green top onions. Add anchovies and arrange olives and sliced or whole radishes on top. Serve with cruets of wine vinegar and olive oil.
  2. Other combinations may include thin slices of prosciutto, capacolla, green peppers, pimiento, fennel, hard cooked eggs, sliced mozzarella cheese, pickled mushrooms, etc.
