Banana Nut Bread


1/4 c. butter or oleo

1 1/4 c. brown sugar

2 eggs

2 1/4 sifted flour

1 1/2 tsp. baking soda

1 tsp. baking powder

1/2 tsp. salt

1/4 tsp. nutmeg

1/2 tbsp. lemon juice

7 1/2 tbsp. milk

1 c. mashed bananas

1 c. chopped nuts


  1. In a bowl, cream butter, beat in sugar, and add the eggs one at a time. Beat well until batter is light and fluffy.
  2. Sift together flour, baking soda, baking powder, salt, and nutmeg.
  3. Measure lemon juice into a cup and add milk (should measure out to be 1/2 c.) Let stand to curdle milk.
  4. Combine with mashed bananas and add the creamed mixture alternating with dry ingredients.
  5. Add chopped nuts. Pour into greased loaf pan. Bake for 1 hour at 350 degrees. Cool thoroughly.
