Chicken Cacciatore


1 whole chicken or chicken legs, etc.

4 tbsp. oil

1 can each tomato and paste

Basil, to taste

1 large onion, chopped

1 clove garlic

1 bay leaf

Salt and pepper

4 green peppers, cut into 1/2-inch strips


  1. Salt and pepper chicken. Brown in oil.
  2. Add tomato and paste for more sauce. Add basil, cook with the cover on, stirring occasionally for about 1 hour until tender.
  3. Cook at low flame on top of stove. In another fry pan, sauté onion.
  4. Add peppers and fry until done. Add to chicken, cooked, covered together about 10 minutes.
