1 qt. cucumbers
1 qt. onions
1 qt. ripe tomatoes
3 green and 3 red peppers
1/2 c. salt
1 qt. vinegar
2 doz. ears of corn
3 c. sugar (plus a little extra to taste)
1 tsp. dry mustard
1 scant c. flour
1/4 tsp. tumeric
- Grind up cucumbers, onions, tomatoes, and peppers.
- Combine these ingredients with the salt, corn, vinegar, and sugar to taste, and boil slowly in weakened vinegar (1 c. water to 2 c. vinegar).
- Separately boil the dry mustard, 3 c. of sugar, flour, and turmeric until thick.
- Add corn relish mixture and cook for 20 minutes. Pour into sterilized jars and seal.
