Corn Relish


1 qt. cucumbers

1 qt. onions

1 qt. ripe tomatoes

3 green and 3 red peppers

1/2 c. salt

1 qt. vinegar

2 doz. ears of corn

3 c. sugar (plus a little extra to taste)

1 tsp. dry mustard

1 scant c. flour

1/4 tsp. tumeric


  1. Grind up cucumbers, onions, tomatoes, and peppers.
  2. Combine these ingredients with the salt, corn, vinegar, and sugar to taste, and boil slowly in weakened vinegar (1 c. water to 2 c. vinegar).
  3. Separately boil the dry mustard, 3 c. of sugar, flour, and turmeric until thick.
  4. Add corn relish mixture and cook for 20 minutes. Pour into sterilized jars and seal.
