German Potato Salad

5 medium potatoes

4 strips bacon

1/4 c. chopped onion

1 tbsp. flour

2 tsp. salt

1 1/4 tbsp. sugar

1/4 tsp. black pepper

2/3 c. vinegar

1/3 c. water

Instructions

  1. Simmer potatoes until tender and then slice thinly.
  2. Fry bacon until crisp.
  3. Add onion and cook for 1 minute.
  4. Blend in flour, salt, sugar, and pepper.
  5. Stir in vinegar and water.
  6. Cook for 10 minutes.
  7. Pour mixture over sliced potatoes. Serve warm.
