Instant Potato Coated Chicken

Chicken

1 egg

1 tbsp. milk

Salt and pepper, to taste

Parsley, for color

1 c. dry instant potatoes

Instructions

  1. Put chicken in mixture of egg, milk, salt, and pepper.
  2. Add parsley for color. Put dry instant potatoes in a paper bag.
  3. Drop in chicken pieces and coat good.
  4. Put a very small amount of oil in a shallow pan.
  5. Bake at 325 degrees without turning for 25 minutes, then turn once and bake another 25 minutes until brown. Serve hot. You may also use pork chops.
