6 large peppers, sliced
2 lb. Italian hot sausage (1 lb. hot and 1 lb. sweet sausage can be used)
4 tbsp. oil
2 cloves garlic, minced
1 tsp. oregano
2 med. fresh tomatoes or 3 tbsp. tomato sauce
1 onion, sliced thin
- Cut sausage into 2-inch lengths and fry until done. Set aside. In another large skillet, place oil, garlic, and onion, and cook until onion is transparent, but not browned. Add peppers, sauce, oregano, and salt, and cook, stirring gently once in a while until peppers are tender. Add the sausage and cook all for about another 5 minutes.
