Minestrone (Italian Vegetable Soup)


1/4 lb. salt pork or fresh side pork, chopped

1 clove garlic, minced

1/2 c. chopped celery and leaves

1 carrot, sliced

1/4 c. chopped parsley

1 c. chopped escarole

1 c. chopped cabbage

1 1/2 c. cooked dried beans

1 #2 can tomatoes

1/2 c. canned chick peas

1/4 tsp. dried basil

1/4 tsp. oregano

2 tsp. salt

1/2 c. elbow macaroni

Tiny meatballs or sausage balls (optional)

Grated parmesan cheese


  1. Brown pork and onions in a large kettle.
  2. Add remaining raw vegetables and cook for 10 minutes, stirring occasionally.
  3. Add 6 cups of water, beans, tomatoes, chick peas, herbs, and salt. Bring to a boil, cover, and simmer for 30 minutes.
  4. Add macaroni and cook for 10 minutes. Serve topped with meatballs and cheese.
