Pasta Fagioli

Sauce:

3 tbsp. cooking oil

1 6-oz. can tomato paste

1 large onion, sliced very thin

1/2 tsp. oregano

1 tsp. fennel seed

1/4 tsp. dried basil

1/4 tsp. crushed red pepper

1/2 tsp. salt

Soup:

6 c. water, salted

1 1-lb. can of red kidney beans or white

1 1/2 c. Ditali macaroni

Can of prepared sauce

Instructions

  1. Place onion and oil in a heavy skillet and cook until onion is transparent.
  2. Add tomato paste, water, herbs, crushed red pepper, and salt.
  3. Simmer for one hour.
  4. If mixture becomes too thick, add a little water.
  5. In a large 5- or 6-quart kettle, bring water to a boil and add macaroni.
  6. Return to a boil and cook gently for 8 minutes.
  7. Add sauce and beans (with liquid) and cook for 2 or 3 more minutes.
  8. If desired, top each serving with grated Parmesan cheese.
