Polish Golumbki (Stuffed Cabbage)


1 med. head cabbage

3 c. instant rice

2 lb. ground beef

2 med. onions, diced

Few slices salt pork, diced

Salt and pepper, to taste

3 small can tomato sauce, water to thin



  1. Cook rice and put in a large bowl.
  2. Set head of cabbage in large pot with just enough boiling water to steam, cook covered for 10 minutes.
  3. Cut softened leaves from head at stem, cover.
  4. Check every few minutes and remove leaves until all are off the stem - set aside.
  5. Brown salt pork, add to rice, ground beef, onions, salt, and pepper; mix.
  6. Put enough into each leaf, roll half, fold in sides of leaf and fold closed.
  7. Arrange gotumbki in roasting pan, cover with tomato sauce thinned with water.
  8. Top with a few slices bacon. Cover. Bake 1 hour in preheated oven at 350 degrees.
