Stuffed Meatloaf


1/2 c. (1 stick) butter

1/2 c. minced onion

1/2 c. diced celery

6 slices toast, cubed

1/2 c. water

1/2 tsp. salt

1/4 tsp. pepper

1/2 tsp. poultry seasoning

1 egg

1 lb. ground beef

1/4 c. fine, dry breadcrumbs

1 tsp. salt

2/3 c. evaporated milk


  1. Use loaf dish, 1 1/2-quart size. preheat oven to slow, 325-degrees.
  2. In saucepan, melt butter. Add onion and celery, and saute until tender.
  3. Combine toast cubes and water in mixing bowl. Add the butter mixture, the 1/2 tsp. salt, pepper, poultry seasoning, and egg. Mix lightly, but thoroughly, and set aside.
  4. In the mixing bowl, combine the ground beef, breadcrumbs, 1 tsp. salt, and evaporated milk, and mix together gently.
  5. Set aside 1/2 c. of meat mixture, and pat remaining meat mixture over bottom and sides of baking dish.
  6. Fill center of loaf with stuffing and spread reserved meat mixture over stuffing.
  7. Bake 1 hour and 15 minutes. Remove from oven and let stand in pan 10 minutes before serving.
