Swedish Meatballs

Swedish Meatballs

1 med. onion, chopped

1 tbsp. butter or margarine

3 slices bread, crust removed and cubed

1/4 c. milk

1 lb. chopped round steak or chuck

1/2 lb. chopped veal

1/2 lb. chopped lean pork

1/4 tsp. pepper

1 tsp. salt

1/4 tsp. allspice

2 eggs, slightly beaten

1/3 c. flour

1/3 c. butter or margarine

1 c. water or bouillon

  1. In a saucepan, sauté the onion in 1 tbsp. butter 3 minutes, until straw-colored.
  2. Put the bread cubes in a large bowl. Pour in the milk and add the onion.
  3. Set aside until milk has been absorbed. Add the chopped round steak, chopped veal, chopped pork, salt, pepper, allspice, and eggs.
  4. With your hands, mix the ingredients together thoroughly. Shape into 2-inch balls and roll in flour. In a large heavy skillet, melt the 1/3 c. butter.
  5. Add the meatballs and brown well on both sides, about 10 minutes. Pour water over the browned meat.
  6. Cover and simmer gently for 30 minutes. Serve on a hot platter.
